Easy Summer Salads [RECIPES]
Ahhh, summer. A time when all those fruits and veggies we’ve been waiting all winter for are back in season. I’m talkin’ tomatoes, I’m talkin’ berries, I am talkin’ about that time of year when the entire world looks and smells edible.
This is the season when we throw off the mantle of stews and chilis we’ve been wearing all summer, and embrace summer salads.
Of course, it’s not quite the height of summer yet, but we are getting awfully close, and it’s time to get ready for it. So while you’re browsing bathing suits online, and trying to remember if all your sunscreen has expired, we’re putting together a little list of summery salads to get our mouths watering.
Corn and Pepper Pasta Salad
- 1 pound dry pasta (farfalle, elbow macaroni, penne, or another of your choice) cooked and cooled
- 1 small red bell pepper, seeds removed and diced
- 1 small orange bell pepper, seeds removed and diced
- 1 small yellow bell pepper, seeds removed and diced
- 1 cup corn off the cob
- 1 cup crumbled salty cheese (feta, goat, ricotta, or your choice)
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 1 clove garlic, diced
- 3 tablespoons white wine vinegar
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- ⅓ cup olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
How to make:
Combine all salad ingredients in a bowl and toss to combine.
Whisk garlic, vinegar, lemon juice, and mustard together. Slowly add olive oil, whisking all the time. Whisk until incorporated. Drizzle over the salad and toss to combine again.
Tomato, Avocado and Cucumber Salad
Nothing says “summer” like summertime tomatoes. They’re juicy, they’re rich, they’re deeply flavorful. We like to keep things simple when tomatoes are the star, adding supporting flavors with avocado and lime but not getting bogged down with heavy ingredients. We suggest cherry tomatoes in this recipe, but if you’re absolutely head over heels in love with grape tomatoes or Roma tomatoes or any other kind of tomato, feel free to swap them in.
- 2 avocados, pitted and diced
- 3 cups cherry tomatoes, halved
- ½ red onion, sliced thin
- 1 cucumber, diced
- ¼ cup fresh lime juice
- 1 tablespoon Perfect Press® Five Seed Blend oil
How to make:
Combine avocados, cherry tomatoes, red onion, and cucumber in a bowl.
Squeeze lime juice over ingredients.
Drizzle with Five Seed Blend oil. Season with salt and pepper to taste.
Summer Berry Fruit Salad
Someone, somewhere along the line of your life, tried to tell you that fruit salads were boring. And I hope you didn’t listen to them. Or that you realized that when they said that, they were talking about sad, watery fruit salads with brown apple chunks and flavorless orange segments.
But in case you didn’t know: fruit salads deserve more than to be a third-rate dessert option for people who can’t eat gluten or dairy. They deserve a starring role on your table this summer, when fruit is perfect and doesn’t need to be dipped in chocolate or covered with sugar.
Start with this one.
- 3 cups watermelon
- 1 cup strawberries, hulled and quartered
- 1 cup cherries, cut into segments
- 1 cup blueberries
- 1 cup blackberries
- 2 large peaches, hulled and cubed
- Juice of 1 lime
- ½ cup plain yogurt
- 1 tsp honey
- 1 tsp lemon juice
- 1 tsp vanilla
How to make:
Combine all the fruit in a bowl. Cover with lime juice and mix well.
If making the dressing, combine all dressing ingredients and mix well. Spoon onto fruit salad and stir to combine.
