Salad for Dinner: Poached Eggs and Parmesan Will Make Your Salad Pop
Raise the bar. The salad bar that is!
Salad gets a bad rap… but it doesn’t have to be boring. There are plenty of ways you can spice it up. Recipes like this one make it obvious that salad isn’t just about veggies. Adding a good source of protein, like the eggs here, mean that you can make it a meal all on its own!
Spring mix salad with poached eggs, black cumin and Parmesan cheese
4 generous handfuls spring mix
4 organic, free-range eggs, poached (for poaching instructions, see below)
1 tbsp white vinegar
the juice of 1 lemon
1 tbsp organic olive oil
Himalayan sea salt (to taste)
freshly ground black pepper (to taste)
⅛ tsp black cumin seed oil
½ cup grated Parmesan
Divide greens into bowls (for two as a meal, or four as a side).
Combine olive oil, lemon juice and salt & pepper. Shake well in a mason jar.
Pour dressing over greens. Drizzle with black cumin seed oil. Poach the eggs, drain with a slotted spoon and set them on top of the greens. Sprinkle Parmesan over each salad.
Serve and enjoy.
To poach eggs:
Bring a pot of water to a boil, add a splash of white vinegar. Once water reaches the boil, remove from heat.
Stir to create a funnel and crack an egg into the centre of the pot.
Return to heat and bring the water back to a low boil. Wait 2-4 minutes until whites are cooked. The yolks should be runny.
